- Flowers and herbs have had a recent come back as ingredients for foods and medicines. Little has been known until very recently about the nutrient composition and the active chemical components of these foods. Yet the vast folklore surrounding the use of herbs in many cultures suggests that they contain health-giving properties. A study done at California State University. Fresno, by M. Urive in spring 1974 showed that flowers in various food products are well-accepted by some people. He also determined by chemical analysis that many common edible flowers are good sources of vitamin C. Stimulated by this initial project and by a natural interest in the use of herbs in medicine and cuisine, this researcher has continued the investigation into their nutrient composition. Iron was chosen as the substance to be determined because of the need for good and inexpensive sources of that nutrient in our diets. Evidence gathered from many countries indicates a widespread occurrence of iron deficiency all over the world.

- Description:
- The main goal of Child Development Practicum (CDP) courses
taught at many colleges and universities is to permit students the
opportunity to acquire skills, knowledge, and information in dealing
with preschool children. Concerns related to these goals are: how to
provide nutritious and appealing snacks and meals; techniques for use
with behavioral problems; planning, implementing, and evaluating the
child's daily activities so as to enhance total development in social
emotional, intellectual, and physical abilities; also, observing and
recording behavior to use the data as a guide to the child's development
as compared to the established norms.
The amount of enrollment, method, and scheduling involved in
achieving these objectives vary among the colleges and universities
that offer the course(s). The instructors who have taught the course
at California State University, Fresno, have worked to include material
on as many of these goals as possible in a one semester course. Whereas
other colleges and universities might have sequels of courses that
would allow more time and attention to cover in detail these same
concerns, this was not the case at CSUF.

- In the shaping of teen-age lives, it seems important
to concentrate on the methods being used to prepare teen-agers
for family living. Perhaps the most effective way of guiding
teen-agers for their future roles of adults is through the
education they receive from their parents. This learning
process should also include the assistance and training
that is so vital to a child in the work of the home. The
degree of success achieved by the parents in educating their
children in family living may be the foundation that will
influence the entire lives of the children.

- Despite the general affluence and cultural
advancement of the American people, malnutrition remains
a serious problem. Its negative consequences are
far-reaching. Some of the more important of these are
poor physical health and poor mental health which, in
turn, lead to lower on-the-job productivity and lover
social aptitudes. While this burden falls most heavily
upon the poor, the problem permeates the total society (i).
Higher welfare costs due to malnutrition, for example, axe
borne by the nation as a whole. In many more subtle ways
malnutrition may act to lower the overall quality of life
in America.

- The purpose of this study is twofold: (l) to investi-
gate the attitudes of selected students concerning career
education in general and (2) to gain insight in how these
students view the home economics field in relation to career
education.In reviewing the literature concerning career education,
one area where little or no research was evident was that of
the students' feelings regarding the need for more emphasis
Qcareer education. For any major educational thrust to be
successful, the students must be aware of and supportive of
the concept. This study is an attempt to give insight into
the feelings and attitudes of students concerning career
education and to assist in giving direction to those educators
who are planning curriculum changes.

disappeared while others have lost almost all of their old culture.

Mexico, still retain a modified form of cultural patterns. The farmers
who were placed on reservations have changed less than their nomadic
brothers.

- The purpose of this study is to identify the ten
most frequent complaints of consumers in Central California.
Legislators can initiate legislation to alleviate problems
which have been identified. Businessmen can correct unfair
practices which have been exposed. If educators are aware
of the most frequent consumer problems, they can prepare
students to recognize common consumer pitfalls. A study
identifying the major consumer problems will enable
concerned individuals to prevent these problems before they
occur.

earth's food supply. At the same time people are becoming
more concerned with the quality of the food they are eating.
As a result, there has been a growing and continual search
to find new and different food sources. One food source that
is gaining growing recognition is flowers.

- In the decade 1962-1972 , more than twenty major
pieces of federal consumer legislation were passed. Among
the many subjects covered were: protection of children
against hazards, toy safety, restricted sale of potent drugs,
cigarette labeling and advertising, meat inspection, product
safety, flammable fabrics, consumer credit, automobile
repair, insurance, and fraudulent land sales (11:24).
In addition to new legislation, educators have
renewed efforts in the consumer's behalf. Educators are
developing curricula to be required at grade levels kinder-
garten through twelve. Governmental agencies, as well as
industry, are taking an active part in consumer affairs by
issuing pamphlets and audiovisual materials for use by adult
consumers as well as students. Public service announcements
prepared by the Office of Consumer Affairs are being shown
on TV. Many newspapers and magazines are providing space to
present current consumer information. This is a picture of
the complex of information that is available to the adult
consumer.
