Preventing and treating metabolic syndrome using anthocyanin rich berries

In the United States and around the world, obesity is becoming more prevalent. Many diseases such as metabolic syndrome are associated with obesity. This can potentially cause other diseases such as cardiovascular disease, diabetes, and stroke. Because of the increased prevalence of obesity that may lead to metabolic syndrome, it is important to find ways to prevent, manage, and treat this problem. Several studies have shown that there may be benefits from the consumption of berries due to an antioxidant flavonoid content called anthocyanins. It has been shown that anthrocyanins may prevent or treat those who have metabolic syndrome. This project will focus on studies that have been done using anthocyanins from a variety berries to prevent or treat metabolic syndrome. It will also include a complete 14 day menu using recipes rich in berries for health.
